Missing Summer in January

Mama Dog: Rescue Shih Tzu Priceless

This is my first blog post introducing my rescue Shih Tzu. She was already about five years old when I rescued her. Her name was Mama Dog from the previous owner and she is the sweetest thing. I can tell her spirit was raised after she was with us for the first week. She has a good home now and spends her days sleeping (she has the cutest snoring sound), playing, and roaming around the house.

Movie Sunday: The Secret Life of Walter Mitty


I have to say I really loved this movie. I'm not being biased because it was based around looking for the lost negative. I won't go into spoiler alerts about the movie, in case you haven't seen it. 

Personally the message I took from the movie is about trying new things and not letting fear hold you back. This is something I struggle with pretty often. I myself am quite and more reserved that most. I also worry a lot more than I should. You will miss out on life if you let worry and fear keep you from exploring. 

I want to be more like Mitty. This is something I really want to work on in the year 2014. I want to live life to the fullest. If your on the fence about seeing this movie, don't be. It made me laugh and cry which usually is a great indication of a well made movie. You won't be disappointed I promise. 


I have a thing for sharks you'll find out when shark week 2014 happens.

Lemon Bars: Recipe

My wedding is about eight months away so of course its time to start baking! I want to find the perfect lemon bars to have at our reception. I have time to try out a few recipes in order to select the best one. Here is the first lemon bar recipe I am going to try!

The recipe must:
   - Be Simple (Especially if I end up needing 12 dozen!)
   - Taste Delicious
   - Freeze Well

Lemon Bars 

Ingredients:
1 cup butter, softened
1⁄2 cup white sugar
2 cup all-purpose flour
4 egg
1 1⁄2 cup white sugar
1⁄4 cup all-purpose flour
    2 lemons, juiced

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.
  3. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
  4. Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. For a festive tray, make another pan using limes instead of lemons and adding a drop of green food coloring to give a very pale green. After both pans have cooled, cut into uniform 2 inch squares and arrange in a checker board fashion.
